American Oak Tawny Single Cask TD0320 was distilled in October of 2008 and decanted in July of this year, maturing at 13 years, 9 months in a single, 300L American oak cask previously used to mature Australian tawny fortified wine. Bottled at 47.5% and producing only 429 bottles.

American Oak ex-Tawny

Unlike our core range American Oak Single Cask, which is aged in ex-bourbon barrels, this single cask whisky is matured in American oak casks previously used to mature Australian tawny port-style fortified wine. The result is a flavour profile combining aspects of both our French and American oak styles, with the caramel, vanilla and bright woodiness of American oak combining with the rich dried fruit and molasses character of fortified wine.

Nose

A powerful onslaught of rich oak, black tea and chocolate mud cake holds space for zingy top notes of paw paw and guava. An Italian summer is invoked; one spent indulging in tiramisu, Chinotto, Crostoli and Amaro, with weekends away drinking tropical rum cocktails in the Caribbean… It’s fair to say that there’s a lot going on here.

Palate

A gentle pucker of oak grips the front palate and drives along all other flavour elements right through the palate. A bomb of chocolate and red berries meet the viscid, chewy return of Sullivans Cove spirit, and then a gentle turn toward citrus (mandarin), saltwater, hazelnuts and blackened yakitori with a sweet plum sauce. Both incredible dense and complex, and delicate.

Finish

Turkish hot chocolate, cinnamon sticks, fresh dill, coriander and celery pave way for a subtle wave of confectionary. As the whisky leaves the tongue, the candy coating of a chocolate Smarties melts away leaving easter chocolate, wafer sticks, red cordial and a sweet, delightful farmyard note of damp earth and straw.
