American Oak Old & Rare Second Fill Single Cask TD0101 was filled in May, 2005 and decanted in June of 2023, for a maturation of 17 years. After such a long maturation, this 300-litre American oak cask, previously used to mature an older batch of Sullivans Cove single malt, yielded only 384 bottles at 47.5% abv. As one of the oldest Australian single malt whiskies ever released, this bottling is a true piece of whisky history and has incredible texture, complexity and length of palate.

Each bottle comes in a unique, hand made, solid oak presentation box, and includes a letter of authenticity signed by our Distillery Manager.

Old & Rare American Oak 2nd Fill

Our Old & Rare American Oak Second-Fill single casks have been matured for a minimum of sixteen years in a cask made from American oak, that has previously matured Sullivans Cove whisky. Second-fill casks allow for long-term maturation without being overtaken by the influence of oak or pre-fill. The result is a whisky of perfect balance: our signature spirit character harmonises seamlessly with the soft oak profile, allowing the fruity esters from our copper Alembic still, Myrtle, to shine through. In addition to the notes of bright fruit, confectionary and coconut, these whiskies exhibit a depth and refinement that can only come from age. As single cask bottlings, every tiny batch is different, expressing the unique characteristics of each barrel.

Nose

Wow, what a nose. White marshmallow and white chocolate fill the nasal palate immediately, quickly followed by guava and passionfruit. Notes of warm buttery pastries arise alongside thoughts of the most delicious continental breakfast you’ve ever had. So juicy, fruity and full of the buttery notes of Danish pastry, morning buns and croissants. High-ester notes of rum are there too, as well as classic Sullivans Cove spirit notes of liquorice and lavender.

Palate

Bright pops of mandarin and passionfruit light up the palate. The spirit is remarkably gentle despite its full and broad body; the papery oak notes and thick, gentle, waxy texture of the palate tell the age of this single cask and present a depth and delicacy that can only be achieved through time. There is a wonderful duality here between the savoury spice notes (curry leaf, cumin) and the sweet and waxy fruits, like peach chunks in nougat, spiced mead, honeycomb and – as the breakfast theme continues – raisin toast with honey butter.

Finish

The bright and honeyed fruits carry over, led by soft caramels and more nougat as whiffs of custard and fudgy dark chocolate cherry ripe pass by. As the fruits and fudgy depth eventually taper away the finish becomes even more creamy, driven by custardy American oak. For a grand finale, the oak comes forward yet again with a second wind (cinnamon, more white marshmallow as found on the nose, and a delicious grip of old oak).
