American Oak Old & Rare Single Cask TD0134 was filled on the 30th of August, 2006, and decanted on the 15th of November, 2022, for a maturation of 16 years, 2 months. After such a long maturation, this 200-litre American oak ex-bourbon cask yielded only 191 bottles at 48% abv. As one of the oldest Australian single malt whiskies ever released, this bottling is a true piece of whisky history and has incredible texture, complexity and length of palate.

Each bottle comes in a unique, hand made, solid oak presentation box, and includes a letter of authenticity signed by our Head Distiller.

Old & Rare American Oak

Old & Rare American Oak is matured for a minimum of sixteen years in American oak casks previously used to age bourbon. This single cask whisky displays incredible complexity and length of palate; rich, oaky and hugely textural while still retaining the unmistakable brightness and character of Sullivans Cove’s unique spirit. Winner of "World's Best Single Cask Single Malt" at the World Whiskies Awards in 2018.
Each bottle is presented in a unique, hand-made, solid wood presentation box and includes a letter of authenticity hand signed by our Head Distiller Heather Tillott. An incredible rarity and a milestone for both Sullivans Cove and the Australian Whisky Industry, these whiskies are a true piece of Australian whisky history.

Nose

Opening with a ripe nasal presence, notes of cherry-flavoured confectionary, red liquorice, apple cider, and lots of American oak spices lay the foundation for a big and broad profile. Chocolate eclairs and a medicinal sweetness emerge alongside leathery vanilla, coffee beans, Christmas cake and earthy, funky cheese rind (in a good way). A truly unique and tantalising nose!

Palate

The transition is gentle yet impactful, fresh, juicy and has decadent notes of peaches and cream, Lotus Biscoff, rosewater and a coconut/raspberry confectionary nuance. With each sip, the intensity builds, showcasing bold oak spice, almond cake, and a subtle astringency, which is harmoniously balanced by creamy strawberry shortcake.

Finish

The finish continues with exceptional flow as citrus marmalade and raisin toast converge with a touch of lemongrass. A distinctive note of sarsaparilla emerges, accompanied by further waves of spice, culminating in flavours of pfeffernüsse and honeycomb. The finish lingers long after the final sip, leaving a remarkable length.
