American Oak Single Cask TD0029 was distilled in August of 2005 and decanted in March of this year for a maturation of thirteen years in a single, 200L American Oak ex-bourbon cask. Bottled at 47.5% ABV, this cask shows impeccable balance between the fresh vibrance of Sullivans Cove's unique spirit and the leathery vanilla bean of an older American Oak cask. With a thick, creamy texture, sunny fruits, bright florist notes, and a grounding grainy character, this whisky screams Sullivans Cove.
Nose: A sweet, rich and broad nose of ripe bananas with caramel sauce, opening up to hints of toasted pine nut and a pleasant grassy note.
Palate: Buttery texture and flavours of bright lemon and dandelion along with lots of malt, vanilla cake, biscuit, and a good tannin backbone that balances the finer fruit notes.
Finish: The maltiness continues, and the impeccably balanced structure offers great length while retaining its vibrance and citrus notes. It ends up being a delicious lemon slice with malt and a hint of chocolate.
