American Oak Old & Rare Single Cask HH0505 was filled on October 3rd, 2000 and decanted on the same day in 2018 for a maturation of exactly eighteen years. After such a long maturation, this 200-litre American oak ex-bourbon cask yielded only 166 bottles at 47.6% abv. As one of the oldest Australian single malt whiskies ever released, this bottling has incredible texture, complexity and length of palate.
Each bottle comes in a unique, hand made, solid oak presentation box, and includes a letter of authenticity signed by our Head Distiller.
Nose: Banana city! Bananas pan frying in butter and brown sugar, followed up by orange and raspberry lollies, thick cream and sweet coconut. Amidst the big ripe fruit notes we see the balancing earthiness of damp soil and leaves in the forest backed up by cereal, vanilla beans, cocoa and worn leather with a waxy, floral note on top. Alluring in all the ways.
Palate: Very much honey driven, with more of that orange confectionary and vanilla pastry. A total custard bomb. Tropical fruit comes through in the second wave with passionfruit, paw paw, dried mango and a floral note of rose water and lychees in syrup.
Finish: The honey continues with a distinctly Sullivans cove cola and anise note bouncing off vanilla and toasted malt. The waxy floral note is front and centre as is. buttery pastry and a strong tropical fruit presence that carries this one home.
