Cask number TD0344 was distilled in December of 2008 and decanted in January of this year for a maturation of 11 years and two months. Aged in a 200-litre, first fill American oak ex-bourbon cask and yielding 296 bottles in total, this whisky is bottled at a strength of 47.5% abv and is an outstanding example of the Sullivans Cove American Oak Bourbon Cask style.

NOSE: Candied lemon and gentle malt both earthy and seductive. Delicate like fine Champagne with fresh garden peas, sourdough and molasses banana bread, and all the classic Sullivans Cove notes of tropical fruit, raspberry, nuts and liquorice.
PALATE: So much texture! Round, creamy malt and then a stunning wave of all the tropical fruity things in the world along with blackberry jam, loads of tinned peaches with cream, walnuts, milk biscuits and vanilla fudge.
FINISH: A seamless transition from palate through the lengthy finish with those tinned peaches settling in for the long haul along with ruby grapefruit and ripe plums all backed up with the quiet, earthy confidence of dried malt, hazelnut praline, coconut and milk chocolate. Star anise, honey, chocolate liqueur and a hint of leathery tobacco round out the super long finish.
